Tip: Canned Chicken
To me, canned chicken sounds disgusting! I'm sure to eat it straight from the can is disgusting, but to use it in some types of recipes it is really an OK substitute if you're running low on time or chicken. I've used it in soups and chicken enchilada's...I'm sure you could use it in some casseroles as well. When you first open the can, it totally reminds me of tuna...and I HATE the smell of tuna. I don't think there is anything grosser that that! It used to make me gag just thinking of it when I was eating the meal that I had prepared it with. However, one day I tried something that has broken me of my fear of canned chicken. Instead of just dumping it into the recipe, I cook it on the stove in a small pan first with a little bit of oil and salt/pepper. It changes the smell and taste of it if you cook it first like this. So, when you're in a bind, try canned chicken...but cook it up first!

I've actually never tried canned chicken, Lor. I've thought about having some in food storage "just in case," though. I usually bake a lot of chicken and then dice and freeze it in 2 c. portions.
Well, if you ever do try it...you can use this tip. Maybe I should use yours as well!
