Easiest Pumpkin Chocolate Chip Cookies Ever!

This may not be the best pumpkin cookie I've ever had, but they turn out pretty good. I like this recipe because it's sooooo easy! When I don't have time (or don't feel like making a mess and using lots of ingredients), I reach for this recipe.

Pumpkin Chocolate Chip Cookies
1 spice cake mix
1 can (15 ounces) pumpkin
1 tsp. vanilla
1 C. chocolate chips

Preheat oven to 350 degrees. Mix cake mix, pumpkin, and vanilla together in large bowl with a spoon. Stir in chocolate chips. Drop by rounded spoonfuls onto a lightly greased cookie sheet. Bake 8-12 minutes. (Make 36 small cookies)

Icing (Optional)
1/2 C. brown sugar
1/4 C. milk
3 Tbsp. butter
3/4 tsp vanilla
1 C. powdered sugar

Stir all ingredients together. Spread on cooled cookies.

I worked up the nutritional value on these cookies (without the frosting). Each cookie is approximately 80 calories with 1 gm fat.

YOU reach for this recipe or ASHLEY? When I called last night she said she was making them! But that's probably a good thing too . . . easy enough for a pre-teen to make!

You're right...Ashley made them last night! This is the perfect recipe for kids because it doesn't make a mess!

Hey Lori, we just tried these cookies today and they're definitely easy and low-fat without the icing. I found that the icing was more of a glaze, so we added about another 1-1/2 to 2 c. of powdered sugar to thicken it up, and we really liked it that way too. Next time, I'm going to play around with it and try adding an egg and about 1/4 c. of oil to see how they turn out...just for fun!

We really liked them! This recipe will be a keeper for us!

Hey Lori, Colby wanted to make these cookies again tonight, so I had him add 1 egg and 1/4 c. oil. They came out really moist! More fattening, but really yummy.
